In Europe, vitamin C is associated with authorized health claims on collagen synthesis.

However, such claims are substantiated only by pre-clinical evidences and by symptoms of deficiency. In this study, 8 healthy male subjects have received a placebo or a vitamin C-enriched gelatin (5 or 15g). The authors used a randomized, double-blinded and cross-over design.

Participants received their supplement one hour before an intermittent activity (rope-skipping for 6 min). The pattern of supplementation was repeated three times per day, with at least 6 hours between each session.

Results showed increased serum amount of glycine, proline, hydroxyproline and hydroxylisine, the key amino acids of collagen. Moreover, in vitro studies showed that serum samples obtained from supplemented participants were able to increase collagen content and improve mechanics of engineered ligaments. Finally, participants receiving 15 g of gelatin experienced an increased collagen synthesis.


Therefore, gelatin and vitamin C are able to increase collagen synthesis in healthy subjects. The clinical benefits of these effects in sportsmen or in subjects with knee osteoarthritis remain however to be confirmed.
