The aim of this randomized, single-blind study was to test whether a supplementation with a tomato paste purèe could improve some haemodynamic parameters in healthy volunteers before and after a standardized fat meal (FM), for 7 days.

Tomato paste

Nineteen healthy male volunteers were randomized either to a low fiber diets (LFD) and tomato paste arm (80 g of tomato paste /day) for 7-days, or to a control arm (LFD-only) with a 2-week washout period.

The difference in Stiffness Index was increased in the LFD and tomato paste + FM-arm, as compared to the LFD-only + FM arm at both 2 and 3.5 h points. After the FM, in both arms, at 2 h, a reduction in the Reflection Index and an increase in heart rate were observed. Interestingly, only in the LFD and tomato paste + FM-arm, some haemodynamic changes were detectable at 2 h; notably, there was an increase in brachial artery diameter and a reduction in diastolic blood pressure.


Tomato paste acutely modifies some haemodynamic parameters triggered by fat meal, suggesting possible haemodynamic beneficial effects in people consuming tomatoes.
